Syeda Nabila Mowla
Ingredients:
Chicken 1lbs
Fennel seeds 1 tsp
Cloves 7 pcs
Cinnamon 3-4 small pieces
Star anise 2 pcs
Nutmeg ¼ tsp
Allspice 1 tsp
Black pepper ½ tsp
Onion ½ pc
Garlic 5 cloves
Ginger 1 tsp
Red chilli 2 pcs
Soy sauce 3 tbsp
Lemon juice 3 tbsp
Sugar 1tsp
Salt to taste
Oil to sear
Step 1: marinade the chicken for an hour with mixed (onion, Garlic, Ginger, chilli) paste, soy sauce, black pepper, salt, sugar and all the spices. Make sure to grind all the spices that include fennel, star anise, cloves, nutmeg, cinnamon and allspice.
Step 2: Sear the chicken on a pan with canola oil and finish it in the oven; or you can slow cook them on the pan after searing them on high heat to get the charred black colour. After charring the chicken slowly cook on the stovetop on medium heat to cook completely.
