Syeda Nbila Mowla
Ingredients:
Beef small curry pieces: 2 Kg
Basmati Rice: 1 kg
Butter: 1 cups
Vegetable oil:1/2 cup
Potatoes: ½ kg
Onion slices: ½ cup
Ginger paste: 2 Tbsp.
Garlic Paste: 2 Tsp
Cardamom ground: ½ tsp
Cinnamon Ground: 6 pcs
Cloves Ground:4 pcs
Mace Ground: ¼ tsp
Nutmeg Ground:1 pcs
Cumin Ground:1 tbsp.
Black pepper: 1 tsp
Dry red chilli powder; 6 pcs
Yogurt: 1.5 cups
Condensed milk: ½ cup
Yellow food colour: Little amount
Rosewater: 3 tbsp.
Raisin: ½ cup
Flour: 1 cup
Salt: 2 tbsp.
Steps:
Step one: Marinade the meat with only salt for 30 minutes. Then wash the meat and dry it.
Step Two: Fry some golden-brown onion in a blend of butter and vegetable oil in a large saucepan. After frying the onions, take them out and keep in a container to use later. In the same large saucepan add some freshly sliced onions, meat, garlic, ginger, all the ground spices, Black pepper, yogurt and rose water. Mix them well. And start sautéing for 30 minutes. Then add water with condensed milk. Check the seasoning and keep braising till the beef is cooked.
Step Three: In a separate large saucepot, start boiling water with some salt. Blanch some rice a, do not cook the rice fully. Cook the rice to ¼. Just take them out one the water starts boiling after dropping rice. Reserve it.
Step Five: Cut the potatoes as equal size. Mix them with some orange food colour, Garam masala powder, oil and salt. Bake then in the oven in 400F until golden brown.
Step Six: In a big sauce pot start assembling all the precooked ingredients. The ingredients will go layer by layer. At first start with a layer of half braise meat with its sauce, then add half the rice, half the roasted potatoes, half the then add the fried onions, raisins, sprinkle food colour. Start another layer on top of following the same sequence. At the very end add 1.5 cups of water blend to the pot before closing the pan with a tight lid.
Step Seven: Make a dough and cover the saucepan and its lid tightly with dough so that the ingredients inside can be streamed at low temperatures. After 40 to 50 minutes of Dum (steamed )Biryani is ready to mix together. Serve it with cucumber Raita, boiled eggs and Borhani (yogurt mint drink). The recipe will serve 8 people.
